When Fabrizio Borraccino, the chef of Spaltenna Castle’s Il Pievano Restaurant, talks about his recipes and their fine ingredients, his eyes light up.
Here his true passion for the Tuscan culinary tradition has found its home and he has the perfect stage to reach his full potential. His dishes are both extraordinary and creative but also reminiscent of the simple, exquisite fragrances that were once used to permeate the kitchens of families in Chianti.
His hands create magic mosaics of liver and ‘maltagliati’ with Etruscan sauce, brave combinations of fried mussels and avocado, desserts with fruit and chocolate, with a hint of basil and rosemary. All the ingredients are grown and picked directly from the Spice Garden of the Castello or provided by selected local farmers.
At Il Pievano Restaurant you will discover how tradition and respect for the seasonal products can match with creativity and originality, in an enogastronomic journey that it is worth alone your stay in Chianti.
The Pievano Restaurant is open for dinner only both for the Castle guests and external customers. You will be able to enjoy its dishes in the Ancient Lounge of the Popes and the Tapestry Lounge, surrounded by medieval works of art and period furniture, while during the summer you will be able to have your dinner by candlelight under the moon in the romantic Cloister in front of the Parish Church.
You can freely choose your courses from the à la carte menu or from our special tasting menu, which enables you to try all together the refined food of our cuisine. Gluten-free dishes are also available for our coeliacs guests.
