VIN SANTO DEL CHIANTI CLASSICO DOC
In Tuscany, Vin Santo is the wine of welcome: in fact it is often offered outside mealtimes to guests, although it is not overlooked at the table, where it is served to accompany desserts or marbled cheeses.
This wine is traditionally produced from the Malvasia del Chianti and Trebbiano grapes, left to dry for three months. After pressing, the resulting must is fermented in small 100 litre oak casks or “Caratelli”, where it remains for four years of ageing.
The wine is golden yellow in colour, with amber glints. The bouquet is traditionally reminiscent of apples and dried fruit, particularly of walnut; the flavour is markedly sweet but sustained by good acidity levels..
